According to the Embassy of Japan in Vietnam, on the occasion of the 50th anniversary of establishing diplomatic relations between Vietnam and Japan, the Japanese side will implement a new initiative on Vietnam-Japan street food, aiming to connect the culinary cultures of the two countries.
In this project, each of the three Vietnamese and Japanese chefs will introduce two new Vietnamese-Japanese fusion dishes created by themselves, demonstrating the friendship between the two countries.
The Organising Board also introduced on the website https://jp-culinaryfes.vn the recipes of these 6 original dishes, prepared by 3 chefs combining traditional Vietnamese and Japanese processing methods and ingredients, along with that is the organisation of a poll to vote for the most favourite dish.
Accordingly, Chef Shinobu Ito, a researcher of Vietnamese cuisine in Japan, will bring two dishes made from simple ingredients but typical of both cuisines, including Okonomiyaki-flavoured grilled rice paper and Grilled rice balls flavoured with fish sauce.
Two Vietnamese chefs Huynh Thanh Lam and Nguyen Ba Phuoc will present dishes that are variations of popular Vietnamese street food combined with Japanese flavours, including sweet potato cakes with cod in spicy sauce, Seabass sandwiches, lotus root fried shrimp tempura and grilled chicken skewers with spicy miso sauce.

Among the 6 dishes created by 3 chefs, the 3 dishes with the most votes will be served at the Japanese Cultural Festival held in Ha Noi next November. At the event, chefs will share the thinking and background behind the recipes they create.
In addition, during mid-November, the Organising Board will also give out free e-books with recipes for these 6 dishes along with instructions from chefs on how to cook them.
Through the actual serving of dishes and introduction of recipes, the Organising Board hopes that people from both countries will be able to taste these dishes, at the same time, these dishes will be prepared as basic family dishes in both countries in the coming years.
The Japanese cultural festival in Ha Noi is expected to open on 12th November, with many unique cultural, culinary, music... exchange activities.
