According to Taste Atlas, Bánh xèo is translated as sizzling pancakes. It is a famous Vietnamese dish, combining rice flour, which is combined with water, turmeric, and coconut milk or coconut cream in order to create the thick yellow batter; scallions, bean sprouts, shrimps, and cubed pork or beef. All ingredients are stir fried before the batter mixture is added to the pan. The pancake is then fried at a low temperature and folded in half, keeping things inside the pancake. It is served with vegetables such as lettuce, carrots, and cucumbers, heavily seasoned with fresh cilantro, mint, and parsley. Nuoc cham sauce is considered the soul of Bánh xèo. Made with fish sauce, lime juice, sugar, chopped chilli peppers, and garlic. The pancakes are always freshly prepared and are supposed to be torn in larger pieces, which are usually wrapped in lettuce or rice paper and eaten by hand.

Bánh xèo can be found everywhere in Vietnam, with slight regional differences in ingredients. The dish is also a popular street food item in Cambodia and Thailand.
