Mixed Pho (Phở trộn) is one of the attractive pho variations of Vietnamese cuisine. The dish does not use broth like pho, instead people mix pho with marinated stir-fried meat (usually beef or chicken), spices, pickled vegetables, fried shallots, rice noodles, and a dressing consisting of vinegar, fish sauce, sugar, and tamarind paste. The noodle salad is often garnished with chopped peanuts and red chilli peppers, while lime wedges are usually served on the side.

Nộm is a popular sweet and sour mixed vegetable dish in Vietnam. The dish has an extremely diverse, creative, and flexible combination of ingredients. It can be green mango, papaya, banana flower, cucumber mixed together, add meats such as pork, beef, chicken, pig ears, jellyfish... seasoned with spices such as fish sauce, vinegar, sugar, lemon, pepper, chilli, sprinkled with sesame, peanuts… In many localities, diners also serve salad with prawn crackers, adding to the deliciousness of the dish.

Vietnamese Shredded Chicken Salad (Gỏi gà) is a common dish in Vietnam. Just like salad in general, the dish has a harmonious sour, sweet, and salty taste, combining shredded chicken, chicken feet, vegetables, and herbs mixed with a broth mixture that usually includes fish sauce, lemon, vinegar, sugar, garlic, chilli... like regular salad dressing. You can add fried shallots and roasted peanuts to add flavour to the dish.
